Is there an app or feature on your current smartphone that you simply could not give up if a competing platform did not support it? For me, Awesome Notes is rapidly becoming an essential, but that is about it.

Can’t really think of any, but have slowly moved to point where a lot of my “preferred” apps are either cross platform, or clou based or both. Evernote, GMail, Twitter, Carbon Fin outliner etc
iTunes Eco system. That’s all.
Evernote and Dropbox are rapidly becoming essential for me, I’d hate to lose those. Most apps have some kind of equivalent, but getting data from one to the other can be a real pain.
At the risk of sounding like a Luddite, I cannot seem to move on from Datebk. I fell in love with it in minutes. It seemed so intuitive to me and covered all the basics plus it has advanced features still not yet available on any other PIM. Tried to spend a week last year using just my WM device but went back to Palm after 3 days. Recently tried to use solely Pocket Informant on my Hero but after a week gave up. It came close to do doing what I want but was just more difficult and everything took longer. Pimlical for Android should be out soon and I am hoping that it will fit the bill. If not then I hope something is out by 31st December 2031 because the Palm calendar stops working on that date!
I don’t think there’s anything so absolutely essential that I wouldn’t move. That said, there would have to be an extremely compelling reason to switch from my iPhone 4 since I’ve now got a MacBook, an iPad, and the iPhone and am quite happy with them. Like if Apple went under.
I’ve switched between devices many times and I still have most of my hair
The closest I’ve come to an essential App is Appigo’s Todo. I wish it had an embedded calendar so that it would be closer to a true PIM, but I’ve found a 3rd party calendar that works for me.

Ever note, Dropbox, Docs to Go and Pocket Informant
For me it’s Laridian’s Pocket Bible. All my other apps are are supported on both iOS and Android (although for most, iOS support and quality is much better). Pocket Bible isn’t on Android yet, but since I have a 3rd Gen iPod Touch running iOS 4.2, it’s okay – I can wait.
Like Gavin, it’s the iPod/iTunes ecosystem that is killer for me, as well as the apps that are related to it, such as Apple Remote, MobileMe and now Airplay. The device ecosystem (iPhone, iPod Touch, iPad, Mac and Apple TV) is also a sticking point for me.
Other “essentials”:
Amazing Slow Downer (create loops and alter the speed and/or pitch of any track in your iPod library – invaluable for music transcription)
Week Calendar
Notes (much maligned, but I like it)
1Password
Audible
Instapaper
FaceTime
